Watermelon, ginger & lime cooler. This is an appropriate drink, both in flavor and shade. Make the base well ahead so it has time to very well sit back.

8 cups chopped watermelon flesh (about 3kg earlier than rind and seeds removed; reserve some rind for garnish)
¼ cup mint leaves, coarsely chopped

liquids
four limes, juiced
⅓ cup stem ginger syrup
¼ cup caster sugar
Crushed ice and glowing mineral water to serve
Extra mint and limes for garnish (optionally available)

Place watermelon in a blender with mint and manner until easy. Strain through a sieve into a bowl, pressing pulp to extract as a lot of juice as possible. Add lime juice and ginger syrup, passing them thru the sieve, then stir in caster sugar till dissolved. Refrigerate aggregate until well chilled. To serve, pour cooler into glasses with plenty of beaten ice to 2-thirds full and top with a bit glowing mineral water. Stir properly. If preferred, garnish with mint, finely sliced watermelon rind and lime wedges. Makes approximately 1 liter of base
